BLT Roll-Ups for a Crowd


I got this idea from Pinterest and served these at the Tribble Family reunion.  They were a big hit and several people asked me for the recipe!

Here is what you need:
2 packs of center-cut bacon cooked and crumbled
2 (8 oz) blocks of cream cheese, softened
1 cup mayonnaise
1 large tomato seeded and chopped
7-8 flour tortillas 
Red leaf lettuce
Plastic wrap

Stir together the crumbled bacon, cream cheese, mayonnaise and tomato until combined.  Spread a large spoonful around each tortilla leaving about a 1/2 inch border.  Top each tortilla with lettuce and then roll up and wrap in plastic wrap.  Refrigerate over night and, when ready to serve, slice into bit size rounds (discard the ends).  


 

Tribble Family Reunion


On Saturday, January 12th, the Tribble family came together for our very first family reunion.  We had a great time catching up and enjoyed a great spread of food.  The reunion was at the Foothills Community room in Lula.  



Anna Ruby Falls

After weeks of windy, rainy and chilly weather we were blessed with a spring-like day of 70+ degrees. We took advantage of the beautiful day and headed to Anna Ruby Falls.  Due to all the rain from the previous weeks the water rushing was REALLY LOUD!  Here is a short clip of the beautiful falls!

Sweet Gunti Boys

The kid-os started back to school this week after a fun and eventful Christmas season.  Ben was anxious to get back to school because he missed his friends.  James wasn't as excited as Ben but they had a great four days back! 

Since they don't have school on Fridays we headed to Chuck E Cheese for a pizza lunch and fun and games.  I'm not the biggest fan of Chuck E Cheese but when you go on a day when most other kids are at school its not so bad.  Ben and James had a blast!  Ben's favorite game was driving the race car (which I of course had to press the gas for him but he loved playing it).  James said his favorite game was a truck game that you launch tokens in to.  He hit the dumper on the dump truck and won A LOT of tickets which he traded in for a laffy taffy and whistle.

Ivy Creek Greenway


We finally got an opportunity to explore the Ivy Creek Greenway in Buford!  Ben and James were thrilled to take their bike and scooter along that Santa brought them.  Ben is doing great with his "pedal bike" and those training wheels will be off before we know it!  Here are a few pics from our day.










On the Farm





Friday, January 4th, we visited with Papa and Grandma Grier.  Ben suggested we pick up donuts to bring and who can say no to that?! What we didn't expect was how bad Bill the Goat would want a donut.  I was holding James and the bag of donuts when Bill came running up to me and jumped up on me trying to get into the donut bag!  Papa grabbed the bag from me but before he could get the bag up Bill had managed to get one leg into the bag.  Who knew goats liked donuts?  Here is a pic of Papa carrying the bag of donuts (after getting Bill out of the bag) and Bill chasing behind him.  It was really funny to watch!


We had a really fun visit with Papa and Grandma.  One of James's favorite things is swinging on the front porch.  James asked Grandma to swing with him and play "rocket ship."  They blasted off and went to Mars to fight the aliens according to James.  



It was a very blessed day!

Slow Cooker Sausage Chili

Slow Cooker Sausage Chili

This easy to make chili is perfect for cold winter nights!



1 pound bulk pork sausage
1 pound ground beef
2 (15.5 oz) cans dark red kidney beans (drained and rinsed)
1 (28 oz) can crushed tomatoes
1 cup frozen chopped onion
1 cup frozen chopped green bell pepper
1 (6 oz) can tomato paste
2 cloves garlic, minced
2 teaspoons salt
2 teaspoons chili powder

Brown the sausage and ground beef in a medium skillet.  Drain off excess fat.  Place meat and remaining ingredients in to a slow cooker and stir to combine.  Cover and cook on low-heat setting for 10-12 hours.

Happy New Year!

Happy New Year!  January 2nd was an interesting day for me.  After almost 3 weeks of vacation, Charlie headed back to work leaving me to get back into the swing of things with Ben and James.  Luckily, Leigh and William invited us to Fernbank.

What used to be a 15 minute drive took us about 35 minutes (ooops, I think I drove a little fast because GPS said it should take me 50).  Since we arrived a little early I called Elizabeth to check on her and the status of Baby Katherine and the on-goings of their house renovation.  She was home and invited me an the boys to stop by.  WOW is all I can say about the renovation.  IT IS BEAUTIFUL!  Can't wait to see the finished product AND meet Baby Katherine!

Fernbank was busy busy!  Lots of kids enjoying the exhibits.  The featured rotating exhibit was Ghenghis Khan.  The boys rushed us through it but what I saw of it was pretty neat.  They had a yurt set up (Charlie may actually be able to talk me in to one of these one day).  James came upon a life-size wax figure of Ghenghis Khan. He said "Is that Jesus?"  I tried to explain Ghenghis Khan to him, but I'm pretty sure my explanation was lost on a three year old.

Our last stop at Fernbank was riding the Santa-Saurus-express!  The boys really enjoyed it!
